Facts about Carrots – They're not just for Rabbits!
If you’ve tried our Purify or Fuel juices, you know that we love carrots! They don't call them "the crunchy powerfood" for nothing; carrots provide tons of nutrition to the body. And did we mention they're delicious? Carrots are the second most popular vegetable in the world after potatoes! (1) Read on for more interesting facts about carrots! So...on to the nutrition part of carrots. If you know anything about carrot nutrition, you know they're chock full of beta-carotene! Believe it or not, the nutrient beta-carotene was actually named after the vegetable. (2) Carrots contain valuable amounts of of other important carotenoids (especially alpha-carotene and lutein); (3) hydroxycinnamic acids (including caffeic, coumaric, ferulic); anthocyanins (in the case of purple and red carrots); and polyacetylenes (especially falcarinol and falcarindiol). They're an incredible source of Vitamin A; immune-supportive vitamin C; bone-building vitamin K; and heart-healthy dietary fiber and potassium. (4) When we're not juicing carrots, we love to roast them with a little olive oil, steam them, or work them into delicious salads! It's recommended that you eat carrots whole for maximum nutrition.
