Co-Founder Annie Lawless' Power Salad

(originally featured on PureBarre.com) I love love love this salad! I make this at least a couple times per week because it covers my nutritional bases and tastes soooo delicious! I never get tired of the variety of textures and flavors in this salad and it’s so great to keep in the fridge because the kale is sturdy enough to hold up for a couple days. If you want tons of energy and a delicious meal for anytime, this salad is for you!

Ingredients:

  • 4 cups destemmed and finely shredded Lacinato kale (approximately 1 bunch)
  • ½ sweet potato, chopped into small cubes
  • ½ pink lady or gala apple, diced
  • 2 T pumpkin seeds
  • 2 T flaked coconut
  • 2 T chia seeds
  • 1 T hemp seeds

Dressing Ingredients:

  • 2 T extra virgin olive oil
  • 1 T balsamic vinegar
  • 2 tsp Dijon mustard
  • 1 tsp raw honey
  • 1 clove of garlic, minced
  • ¼ tsp sea salt
In a small bowl, mix together the dressing ingredients. Add it to the shredded, destemmed kale and massage together until all of the kale leaves are coated well. Add the rest of the salad ingredients, adjusting amounts if you wish to add more or less of certain ingredients. Toss everything together and eat immediately or allow the flavors to develop together in the fridge for an hour. Enjoy! Annie Lawless & Suja Juice
